Ingredients
  

Chutney
  • 1 tablespoon olive oil
  • 3 shallots, finely minced or sliced
  • 1/4 cup bourbon
  • 1/4 cup rice vinegar
  • 1/4 cup red wine
  • 3 cups red or purple grapes, cut in half
  • 1 cinnamon stick
  • 1 bay leaf

Method
 

Cooking
  1. Warm the olive oil over medium heat. Add the shallots and cook, stirring occasionally, for 5-10 minutes until they become very soft and fragrant.
  2. Add the halved grapes and increase the heat until the mixture is hot. Pour in the bourbon, rice vinegar, and red wine, allowing the liquid to sizzle and loosen the browned bits from the pan. Add the cinnamon stick and bay leaf.
  3. Reduce to a simmer and cook for about 30 minutes, stirring occasionally, until the grapes begin breaking down.
  4. Press the softened grapes with the back of a wooden spoon until the mixture reaches a jam-like consistency. Remove from heat, cool, and serve with crackers and cheese.
