No-Bake Oreo Icebox Cake

Ingredients
  

For the Base
  • 36 pieces Oreo cookies (filling included)
  • 6 tbsp melted butter
For the Cream Filling
  • 2 cups heavy whipping cream Chilled for easier whipping
  • 8 oz cream cheese, softened To avoid lumps, soften to room temperature
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup Oreo cookies, roughly chopped About 10 Oreos
For the Ganache Topping
  • 1 cup semi-sweet chocolate chips or chunks
  • ½ cup heavy cream
  • 1 tbsp butter For shine, optional

Method
 

Preparation
  1. In a mixing bowl, beat the heavy whipping cream until stiff peaks form.
  2. In another bowl, beat the softened cream cheese until smooth and creamy.
  3. Gradually fold the whipped cream into the cream cheese until well combined.
Layering
  1. In a rectangular dish, layer 12 Oreo cookies at the bottom.
  2. Spread a layer of the cream mixture over the cookies.
  3. Repeat the layering process until all cookies and cream mixture are used, finishing with a cream layer on top.
Topping
  1. Melt the semi-sweet chocolate chips and pour over the top layer.
  2. Cover and refrigerate for at least 4 hours or until set before serving.

Notes

Serve chilled for the best texture. Pair with cold coffee or fresh berries. Store in the refrigerator for up to 4 days.
