Ingredients
  

Custard Base
  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
Layer Ingredients
  • 4 ripe bananas, sliced Use ripe but firm bananas to prevent them from becoming mushy.
  • 1 box vanilla wafers

Method
 

Preparing the Custard
  1. In a saucepan, combine sugar, flour, and salt.
  2. Gradually stir in the milk and cook over medium heat until thickened, stirring constantly.
  3. Remove from heat and whisk in egg yolks. Return to heat and cook for an additional 2 minutes.
  4. Remove from heat and stir in butter and vanilla.
Layering the Pudding
  1. In a serving dish, layer vanilla wafers, sliced bananas, and the pudding mixture.
  2. Repeat layers, ending with pudding on top.
  3. Chill for at least 2 hours before serving.

Notes

Serve this pudding chilled for the best texture. Pair it with strong coffee or a light black tea. For a neat presentation, press some extra vanilla wafers around the edge of the serving dish and arrange thin banana slices on top just before serving. Store in the refrigerator covered; it will keep well for up to 3 days.
