Preparation
- Process the crackers into fine crumbs based on the texture you prefer. Add the crumbs to a large mixing bowl with the peanut butter.
- Combine the sugar, milk, and butter in a saucepan over medium-low heat. When the mixture begins boiling, cook for 1 minute while it becomes frothy, then remove from the heat.
Assembly
- Immediately pour the hot sugar mixture over the cracker crumbs and peanut butter. Add the vanilla and stir until the mixture forms an evenly combined soft dough.
- Press the mixture into a 9-inch glass baking dish, lined with parchment paper if desired. Let it cool for at least 1 hour or until firm enough to slice into squares.
Topping
- Melt the chocolate chips and drizzle the chocolate over the set fudge. Sprinkle with coarse sea salt.
Notes
The cracker size used in this recipe can be measured by counting sheets with three smaller pieces as one cracker. The crackers do not need to be broken apart before counting.
