Sesame Noodle Bowls with Tahini Sauce for Meal Prep

Ingredients
  

Sauce
  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar, to taste
Noodle Bowls
  • 6-8 oz / 225 g stir fry noodles, Chinese egg noodles, or linguine in a pinch
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional: see notes)
  • Sesame seeds

Method
 

Preparation
  1. Combine the sauce ingredients and whisk until smooth, or blend together or shake in a jar to create an even mixture.
  2. Cook the noodles a few minutes less than the package directions. Rinse with cold water if the noodles become very sticky.
  3. Coat the noodles with about half of the prepared sesame sauce.
Assembly
  1. Portion the noodles, edamame, cucumber, and chicken into containers.
  2. Add a drizzle of the remaining sauce and finish with sesame seeds.

Notes

For the chicken method, cut chicken breasts into bite-sized pieces, coat with olive oil, salt, pepper, and garlic powder, and bake at 425 degrees for 15 minutes. For a browned exterior, transfer the baked chicken to a skillet with extra sesame sauce and cook until the outside is browned.
